It's miserable here. Cold, damp, and it's raining. I'll take snow any day of the week. Here's a pic of banana cupcakes with peanut butter white chocolate cream cheese frosting cupcakes that I whipped up! (That's a mouthful, huh!). Recipe for the frosting is below the pix!
Peanut Butter White Chocolate Cream Cheese Frosting
2 1/2 cups of powdered sugar
3/4 cup of peanut butter
2 ozs. of white chocolate- melted and cooled
1/2 cup of butter at room temp.
1/2 tsp. of vanilla extract
4 ozs. of cream cheese - at room temp.
1. Cream the butter and cream cheese until it's light & fluffy
2. Add the cream cheese and beat again.
3. Add the peanut butter, white chocolate, and vanilla extract until it's combined.
4. Gradually add the powdered sugar and beat the icing for about 4 minutes.
** Note for a thicker icing, you may want to add another 1/2 cup of powdered sugar... Sometimes I do, sometimes, I don't! Enjoy!
